Description
The Regular-sized Edikaikong is a prestigious, nutrient-dense vegetable soup originating from the Efik and Ibibio people of South-South Nigeria. It is prepared using a generous combination of two specific leafy greens: waterleaf and fluted pumpkin leaves (ugu). Unlike other soups, Edikaikong is cooked with little to no added water, relying on the natural moisture of the vegetables and a rich base of palm oil. This regular portion is “loaded” with a high ratio of proteins, including seasoned beef, stockfish, dried fish, and periwinkles, giving it a complex, crunchy, and savory profile that is widely considered a gourmet traditional meal.
